Bottles back then were fragile and didn't travel, so the monks' success remained a secret. After perfecting his sparkling white, Laurent wanted to make a rosé, but appellation laws would not allow it. Undaunted, he petitioned the authorities and won. This pioneering pink gains its salmon hue in the same manner as the finest Champagnes, from gently pressed Pinot Noir (others merely blend red and white wine).
